Bahan:
500 gr ayam paha fillet
2 siung bawang putih
1 buah bengkuang
4 lembar smoked chicken
1 butir putih telur
2 sdm tepung sagu
1 sdm kecap ikan
6 sdm air
3 sdm minyak goreng
2 butir kuning telur asin mentah
¾ sdt garam
¼ sdt merica
3 sdt gula
½ sdt kaldu jamur
Garam untuk bengkuang sesuai selera

Resep Tim Ayam Cincang Telur Asin Khas Hong Kong

Langkah:
1. Potong kotak-kotak kecil smoked chicken
2. Kupas bengkuang dan potong-potong dadu kecil, masukkan ke dalam wadah. Tambahkan garam, remas-remas bengkuang hingga keluar cairan berwarna putih. Cuci bersih bengkuang, saring, dan tiriskan.
3. Cincang kasar ayam lalu masukkan parutan bawang putih, bengkuang, smoked chicken, kecap ikan, tepung sagu, garam, merica, gula, kaldu jamur, putih telur, air dan minyak. Aduk rata
4. Masukkan adonan ke dalam aluminium cup lalu beri lubang ditengahnya, letakkan kuning telur asin mentah di atasnya
5. Kukus selama 15-20 menit
6. Telur Mata Ayam siap disajikan

This Chicken-Side-Up is great if you’re bored with oily dishes or dishes that contain coconut milk. This dish is very practical to make with simple and easy-to-find ingredients. It tastes great with soft chicken and crunchy jicama textures. You can serve this for your family at home, from kids to adults.

Chicken-Side-Up Recipe

Ingredients:
500 g chicken thigh fillet
2 clove garlic
1 pc jicama
4 pc smoked chicken
1 pc egg whites
2 tbsp sago flour
1 tbsp fish sauce
6 tbsp water
3 tbsp oil
2 pc raw salted egg yolk
¾ tsp salt
¼ tsp pepper
3 tsp sugar
½ tsp mushroom stock powder
Salt for the jicama, to taste

Optional:
Ginger liquid
Sesame oil

Steps:
1. Chop the smoked chicken into small dice.
2. Peel the jicama and chop into small dice. Transfer to a bowl. Add some salt and massage the jicama until some white liquid is released. Rince the jicama thoroughly, drain, and set aside.
3. Roughly mince the chicken and add grated garlic, jicama, smoked chicken, fish sauce, sago flour, salt, pepper, sugar, mushroom stock powder, egg whites, water, and oil. Mix well.
4. Add the dough into an aluminum cup. Create a crater at the center and place the salted egg yolk on top.
5. Steam for 15-20 minutes.
6. Chicken-Side-Up is ready to serve.
